These spring rolls make a great appetizer or party food. With vegetables and lots of flavor filling. Get some help from your family or even with your kids around you with the rolling, and you'll be crunching on these delicious spring rolls in no time.
Ingredients :
- 1 medium shallot.
- 1 clove garlic ( chooped).
- 2½ cm. Ginger root.
- 1 red chilli ( optional).
- 300 gr White Cabbage (shredded or finely chopped).
- 250 Gr Bean sprouts.
- 1 small bamboo shoots.
- 1 large Carrot (cut into small match stick like strips).
- 1 pkg. small spring roll wrappers (thawed if frozen)
- 1 Tbs. salt
- 2 Tbs. cooking oil.
- 2 Tbs. regular soy sauce
- 2 Tbs. fish sauce
- 2 Tbs. lime juice
- 4 tsp. sugar
- Oil for deep frying
STIR-FRY SAUCE:
- 2 Tbsp. regular soy sauce
- 2 Tbsp. fish sauce (if vegetarian, substitute vegetarian oyster sauce, or extra soy sauce)
- 2 Tbsp. lime juice
- 1/4 tsp. sugar
TO SERVE:
Served with Thai sweet chilli sauce
How to make :
- Place 2 Tbsp. oil in a wok or large frying pan over medium heat. Add garlic, ginger, shallots, and chilli. Stir-fry until fragrant (let say about 1 minute..lol...).
- Add cabbage, bamboo shoot and carrot and as you stir-fry, add the "stir fry" sauce. Stir-fry 1-2 minutes, until vegetables have softened.
- Remove from heat and add bean sprouts, tossing to mix in.
- Do a taste test for salt, adding 1 Tbs. more fish or soy sauce if not salty enough.
To assemble :
- Place a spring roll wrapper on a clean working surface. Place one Tbsp. or more of the filling on the wrapper.
- Fold the left and right sides of wrapper over filling, then lift up the wide end nearest you and tuck overtop. Roll to the other end. Secure the roll by dipping your fingers in some water and wetting the end, "pasting" it shut.
- Deep fry the rolls.
- Spring rolls are done when they turn light to medium golden-brown .
- Place on paper towels to drain .
- Serve spring rolls while still hot with Thai Sweet Chili Sauce, or your own dipping sauce.
NOTE :
For me ...I adding one more ingredient as the filling. its a rice noodle ( Soak dried rice noodles in hot water until soft, If desired, use scissors to cut long noodles after soaking , so they are easier to eat)
