Kroket Kentang



Cerita punya cerita lagi kedatangan mertua dari Jakarta dan iseng punya iseng ngk ada kerjaan didapur berhubung mertua cowok lagi keluar ma anak-ku yg gede...akhirnya kita nguplek nguplek dapur dan nemu bahan buat kroket...ya sutra jadilah kroket kentang ini...hehehhe cuma memang lagi ngk mau bikin yg kroket kentang keju....yg isi biasa aja dech...hehehhe...next time yg keju oc....

KULIT :

  • 5 buah kentang, rebus atau kukus, kupas, haluskan dengan garpu.
  • 2 sendok makan susu bubuk
  • 1/4 sendok teh pala bubuk
  • 1/2 sendok teh garam ( sesuai selera )

ISI :

  • 150 gram daging sapi, cincang halus
  • 1 buah wortel, potong dadu kecil
  • 100gr buncis potong kecil
  • 4 siung bawang merah, cincang atau iris halus
  • 2 siung bawang putih, cincang
  • 1 batang seledri, iris halus
  • 1 sendok teh garam (sesuai selera )
  • 1/2 sendok teh merica bubuk
  • 1/2 sendok teh pala bubuk
  • 1 sendok teh gula pasir
  • 2 sendok makan kecap manis
  • 100 cc air
  • 2 sdt tepung terigu

UNTUK OLESAN :

  • 300 gram tepung parnir
  • 2 butir telur, kocok

CARA PEMBUATAN :

1. Siapkan wajan untuk menumis isi kroket dan panaskan 3 sendok margarin, tumis bawang merah dan bawang putih dengan margarin hingga harum. Masukkan daging sapi, wortel, seledri, garam, merica bubuk, pala bubuk, gula, kecap manis, dan air, aduk rata dan masak hingga setengah matang kemudian masukkan tepung terigu supaya kental (lebih baik dalam keadaan setengah matang) aduk2 rata dan masak kembali hingga isi kroket matang.

2. Untuk kulit campurkan kentang yg sudah dihaluskan dengan susu bubuk, pala bubuk, dan garam (rasa sendiri bila kurang garam bisa ditambahkan sesuai selera) hingga rata.

3.Cara pembuatan ambil 1.5 sendok makan adonan kentang dan pipihkan kemudian beri adonan isi, rapatkan kembali dan bentuk bulat agak lonjong.

4.Celupkan kroket kedalam kocokan telur dan balur dengan tepung panir, ulangi sekali lagi dan kroket siap di goreng ...

Balapis Manado/Layered cake balapis

This Balapis Manado is a traditional cake from Manado with strong flavour of pandan leaves. Manado is the capital city of the North Sulawesi province in Indonesia. Manadonese cuisine is famous throughout Indonesia because : Manadonese eat absolutely anything and the flavor of choice is very, very spicy ...LOL...Manadonese cuisine uses a lot of chilies and nicely scented herbs like kaffir lime leaf, basil leaf (daun kemangi), lemon grass and ginger.

And yeah i'm proud to be a Manadonese/Minahasan (actually half of Manadonese hehehhe and half of Javanese).


Here's the recipe of "Balapis Manado".....modified by me.
Ingredients :
  • 200ml of thick coconut milk , mix with 500ml of water and 400ml of fresh milk
  • 250gr rice flour
  • 50gr of tapioca starch
  • 200gr granulated sugar
  • 1tsp of pandan paste (becoz I cant find Suji leaves here to make green liquid paste)
  • 1/2sdt salt
  • 3 of fresh pandan leaves.
Directions:
    • Bring to boil in a saucepan over medium heat the coconut milk, pandan leaves and salt. let it cool until warm for around 30minutes.
    • Mix in big mixing bowl all dry ingredients of flour, tapioca starch and sugar and divide by 2 each in different medium mixing bowls.
    • Divide coconut mixture between 2 medium bowls (550ml each) and add pandan paste into one of the bowl and mix well.
    • Now, pour in white coconut milk into one bowl contains of dry ingredients and stir well until smooth. And pour in the green coconut milk into another bowl of dry ingredients and stir well until smooth.
    • Grease 20cm of cake pan with oil and put inside the hot steamer.
    • Pour in 50cc of white coconut mixture and steam for around 5minutes, and continue with ....
    • Pour in 50cc of green coconut mixture and steam for around 5 minutes.
    • Repeat the process untill no more mixture left ...in the end of the process steam a bit longer for around 20minutes.
    • Take out the cake pan from the steamer and let it cool.

Bingka Kentang ( Potato Cake )


The recipe is very famous in Indonesia, very rare to find it here......

Ingredients :
  • 5 eggs (Beat eggs until fluffy and set aside )

  • 150gr granulated sugar
  • 300gr potatoes, steamed and mashed

  • 150 cc coconut milk from 1 coconut, boiled and let it cool ( I changed with 100ml fresh milk + 100ml whipped cream)

  • 1tsp vanilla extract

  • 1tsp salt

  • 75gr kismis/raisin

Directions :

  1. Preheat oven at 180 C.

  2. Mix potatoes, sugar, vanilla, salt and coconut milk, stirring until the ingredients are evenly distributed and the sugar has dissolved. Pour in beaten eggs and stir well.

  3. Pour batter into a 15 cm cake tin lined with grease-proof paper and brushed with margarine. Bake around 50 minutes or until golden brown. ( halfway through the baking time, take out the cake from the oven and put kismis/raisin on top of potato cake, and continue baking ).

  4. Let it cool and put inside refrigerator if you like....LOL

Risoles

I'm craving for food again, so I made this risoles... Risoles is an Indonesian's snack and it's best eaten for breakfast or afternoon tea .

Ingredients :

Risoles skins :
  • 1 cup of all purpose flour
  • 3 cups milk
  • 2 eggs
  • 1 tsp salt

* In the bowl, sift the flour and add the rest of the ingredients then whisk into a smooth batter. On medium low heat a small pan, spray with cooking oil and pour the batter in to make a thin skin, when the surface is done slide the skin on to the plate, becareful the bottom shouldn't be brown and crispy.

Fillings :

  • minced chicken
  • 1 carrot cut into small cubes
  • 1 potato cut into small cubes
  • 1 big onion (chopped)
  • 1 clove garlic ( chopped)
  • 1.5 tsp salt
  • 1/2 tsp pepper
  • 2 Tsp sugar
  • 1.5 cups milk
  • 1/4 cups all purpose flour mix with 1 cup water (milk)
  • Cheese (optional)

Directions :

  1. Heat oil and add onions and garlic until lightly brown, then add the chicken.
  2. After that, add the carrots and potatoes stir in medium heat.
  3. Add the all purpose flour and milk . Season with salt , sugar and pepper
  4. Cook in medium heat & keep stirring until it is thick.
  5. Lastly add the slice cheese. Cool it down
  6. Take one cooked skin and add the filling on the middle of the skin and fold it.
  7. Dip them in a beaten egg white + milk and coat them with breadcrumbs.
  8. Deep fry until the skin fully cooked.....

Sweet Cassava (Singkong Thailand) (_Must try AAA+++_)

Hi all, waktu balik dari Johor aku tuh beli singkong ...gila gede gede banget singkong disana murah pula and cuma 5 ringgit dibanding singapore udah bisa buat berhari-hari bahkan di bus on the way back to Singapore, gua masih bisa bagi bagi ama tetangga sebelah bangku dan menurut gua malah masih kebanyakan ( gini dech kebiasaan apa2 mahal begitu dapat barang harga miring dikit lapar mata, kencang tangan keluar duitnya xixixixi ), trus aku bagi aja tuch singkong sebagian bikin soup singkong pake ceker, sebagian keep dulu. Kepikiran mau bikin apa enaknya yach, sampai terlintas ide mau bikin singkong ala Thailand yang manis manis gimana gitchu...hehehhe...browsing resep sana sini ...ya sutra...aku langsung siapin bahan dan buat, wuah ternyata nikmat banget hasilnya sama seperti di restaurant Thailand.

Bahan :
  • 2 kg singkong, dibuang kulit dan dipotong-potong tebal 11/2 cm
  • 1 sdm garam
  • 4 lbr daun pandan.
  • 3 ltr air
  • 450 gr gula pasir (bisa disesuaikan selera)

Bahan Saus :

  • 1 ltr santan kental dari 2 butir kelapa
  • 2 sdt garam atau sesuai selera
  • 4 lbr daun pandan
  • 35 gr tepung sagu dan
  • 150 ml air, dilarutkan utk pengental (corn flour)

Cara Membuat :

1. Rebus singkong, garam, daun pandan dalam 3 ltr air sampai matang dan empuk

2. Tambahkan gula pasir sambil terus diaduk sampai mengental.

3. Saus : Rebus santan kental, garam, dan daun pandan sambil diaduk sampai mendidih.

4. Kentalkan dengan larutan tepung jagung, sampai mengental.

5. Sajikan singkong dengan ditambahkan saus.

Hasil : 15 buah

Tips : gula pasir masukin pas singkong sudah empuk.

Putu hijau....


I dunno why suddenly wanna make putu ayu....it's indonesian traditional kueh, very easy to make also, green in colour its a must, but you can change the colour with whatever colour you like. For me the colour green its a pretty colour to look at for this "kueh" so will use green today....

Ingredients :
  • 250 gr flour
  • 225 gr sugar
  • 4 eggs
  • 130 ml coconut milk
  • 1 tsp emulsifier ( I use Ovalet )
  • 1 Tsp green colouring essence
  • 200 gr young shredded coconut add 1 tea spoon salt and mix together.

Instruction :

  • 1. Beat sugar and eggs until light and foamy and add emulsifier, continue beating the batter till pale and thick.
  • 2. add coconut milk and mix in flour bit by bit, mix well and add in green essence.
  • 3. Prepare putu ayu cups, grease with oil, add in young shredded coconut at the bottom ( a bit only) then drop the batter into the cup.
  • 4. Steam for about 35 minutes.

It's easy right....

Crumble crumble what I also dunno ...no name ok !!!!!!!!!


Ehm.....iseng ngk ada cemilan....trus ke dapur check sana check sini (aka inspeksi bahan bahan) ketemu ubi jalar ma pineapple...and my mind langsung mutar mutar otak mau buat apa today...so gua potong-potong aja tuch ubi jadi dadu and steam, udah matang giliran pineapple gua potong ...taruh and susun didalam piring panggang...ehm sekarang siapin bahan utamanya yg terdiri dari tepung, susu powder, a pinch of salt and lalalallaa palm sugar yg serbuk ato kalo ngk punya cuma ada yg utuh kaya batu di tumbuk aja ampe hancur...campur semua bahan jadi satu kasih mentega...sebenarnya cara bikinnya mirip mirip kulit pie hahahaha....udah jadi satu baru gua tabur di atasnya and panggang di oven...oh my rasanya boh...kriuk kriuk manisnya pas...perfect....!!!!!!!!!! ubi , nenas bisa ganti dengan apple, jackfruit whatever u like ok....lol...maem dulu ach....

Bolu Kukus aka Bol-kus



Bolu kukus its Indonesian cup cake with creamy, soft and light texture. they vary in colour, mostly brown with white, red with white, and many. If you adding some chocolate rice they will call this "dalmation cup cake "
Bolu kukus :
  • 2 cups of sugar
  • 1 tsp emulsifier
  • 2 cups flour
  • 2 eggs
  • 1 cup yoghurt ( thick ones )
  1. bring your steamer to boil first
  2. prepare your mixing bowl and beat all ingredients untill the batter become thick and pale
  3. take another bowl and pour some batter there, and add in ur fav. colour like brown , red whatever you like
  4. drop the batter into bolu kukus cups, then drop a teaspoon your another colouring batter on top of every cup
  5. Steam for about 12-15 minutes ( do not open the lid of your steamer )
