Mini Fruit Chocolate Pie (Must try AAA+++)

Baking a mini fruit Pie as simple as one, two and three...lol...If you're looking for a simple pie recipe, this one suitable for you. This recipe has the virtue of being great for any fruit and any occasion. It's fine for everything. You can eat just after a daily meal or on a special occasion, this pie is good dessert. Not only is good with any meal, but you can change the pie filling flavor with no problems.

So here's the recipe for mini fruit pie.

CRUST :
  • 75gr caster sugar
  • 250gr all-purpose flour (shifted )
  • 150gr butter, softened
  • 3 Tsp cocoa powder
  • 2-3 Tsp cold water
  • DCC ( dark chocolate cooking ) melted

FILLING :

  • 2 eggs
  • 75 gr sugar
  • 35 gr corn starch
  • 300 mL fresh milk
  • 1/2 Tsp vanilla extract

TOPPING :

  • Strawberry ( cut into 4 )
  • Kiwi ( cut into slices )
  • grapes
  • " these fruits its optional you can change with whatever fruit you like "

GLAZE :

  • 2Tsp gelatine + fruit juice boil it over low heat and keep stirring until transparant in colour.

Directions :

How to make crush :

  1. Preheat oven to 180C
  2. In mixing bowl combine the flour and cocoa powder . Stir to combine. Add the chilled butter pieces to the bowl. Cut them in with a pastry cutter or fork to break it up and mix it in. Add sugar continue mixing the dough and add the ice water. Mix until the dough holds together (add a bit more water, if necessary).Turn the dough onto a lightly floured surface, knead it together, wrap in cling warper and chill for at least half an hour.
  3. Roll out the dough and Cut the dough into pieces that will fit into the mini pie cups.
  4. Put in the oven around 10-25 minutes.
  5. Take out from the oven and remove to a wire rack for cooling ..after 2 minutes take out each from pie cups.
  6. After its completely cool ..brush with DCC...and let it till the DCC set.

How to make filling :

  1. In a sauce pan mix eggs, sugar, corn starch and fresh milk over low heat till it thickens.
  2. let it cool and add vanilla extract.

To assemble :

  • Put a teaspoon of filling in each tart shell. and put on top of the cream fruits topping. And brush with jelly glaze.

and ready to eat......best eat on same day....

Country Apple Pie



Ingredients :

Pastry

2 1/2 cups all purpose flour
1/2 tsp fine salt
1/2 cup unsalted butter
1/2 cup shortening
2 tbsp lemon juice
6 tbsp to 8 tbsp cold water as needed.



Filling

7 cups of sliced apples
3/4 cup sugar
1/2 cup light brown sugar
2 tbsp all-purpose flour
1 tbsp lemon juice
1 tsp lemon essence
1 tsp cinnamon
1/4 tsp nutmeg
1 tbsp unsalted butter
1 egg whisked with 2 tbsp cold water for brushing.
sugar for sprinkling


Intruction for Pastry :
  1. Combine flour with salt. add in butter and shortening until mixture is a roughly even crumbly texture.
  2. Add lemon juice and water and blend just until dough comes together. wrap and chill for 30 minutes.

Filling :

  1. Toss all ingredients except butter and set aside.
  2. Preheat oven to 200 °C.
  3. On a lightly floured surface, roll out half of dough to just under ¼-inch thick. Lightly dust bottom of a 7-inch pie pan with flour and line pan with dough.
  4. Fill pastry with apples and dot top with butter.
  5. Roll out remaining half of dough and place over apples. Trim and cinch edges of pie and cut in holes in top layer of pastry to let steam escape.
  6. Brush top of pie with eggwash and sprinkle lightly with sugar.
  7. Bake for 10 minutes, then reduce heat to 190 °C and bake about 40 minutes, until filling is bubbling. Cool pie for at least an hour before slicing.
