Banana Cake



Here's the recipe :

Preheat the oven to 180 degrees Celsius.

  • 1 1/2 cups sugar
  • 125g butter, softened
  • 2-3 large mashed bananas
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon bicarbonate soda
  • 100ml buttermilk
  • 2 large eggs
  • 1 1/2 cups/ 225gr self raising flour
I use a springform pan (22cm diameter) for easy removal of the cake, and grease the side and base and line base of the pan with non-stick baking paper.

How to make :

  1. Sift flour and bicarbonate soda together into a large bowl, put aside.
  2. With food processor, place butter, sugar, banana, vanilla and eggs ( if you dont have food processor , use your mixer).
  3. Process for about 2-3 minutes, and scrape down side of food processor.
  4. Add in buttermilk, process again with the processor to combine
  5. Add flour mixture to food processor and process until just combined.
  6. Pour batter into prepared pan.
  7. Bake for about 50-60 minutes, or until toothpick inserted in the centre of the cake comes out clean.

Leave cake to cool on a wire rack, best if you spread with cream cheese icing.
