Grape cheese cake

INGREDIENTS :

Base :

  • butter 55gr
  • digestive biscuits 100gr (finely crushed)
  • Sugar 1 1/2 Tsp

Directions :

  • melt butter in pan over low heat...add combined biscuits and sugar, mix well
  • press into a greased 18-cm springform with the back of a metal spoon or with your hand
  • cover cake pan and refrigerate for at least 30 minutes.

FILLING :

  1. Cream cheese 250gr, diced
  2. Castor sugar 70gr
  3. Lemon juice 1Tsp
  4. Powdered gelatine 1/2Tsp+ 1/2tsp dissolved in 50 ml water
  5. Grape puree 150gr
  6. Whipping cream 200ml
  7. Colouring if you like ....

DIRECTIONS :

  1. Beat cream cheese, sugar, and lemon juice until smooth.
  2. Pour in gealtine, grape puree and mix well
  3. Blend in cream
  4. Take out the pan from refrigerator, spoon filling inside the pan carefully.
  5. Cover cake pan, refrigerate for at least 6 hours
  6. Trasfer to a serving plate and arrange with fresh grapes and whipped cream...

Marinated Fried Chicken

Butter Cream for cake decorating


Here's the recipe:

  • 500gr of shortening
  • 500gr of unsalted butter
  • 200gr condensed milk ( you can add more if you like)
  • 1/4 teaspoon of salt
  • 1 teaspoon vanilla essence

    Directions :
  • In mixing bowl beat butter and shortening with low speed
  • add in condensed milk, salt and vanilla essence and beat with medium speed ( around 30minutes plus or until its light and very smooth) - if you make butter cream for piping (example for making butter cream rose)dont beat too long coz you need a slightly thicker butter icing mixture , so you can easily making your rose petals. *_^
  • Now you can add coloring to your butter cream

Ayam kecap (Chicken in sweet soy sauce with egg)

Here's my recipe :
  • 1/2 kg of chicken ( cut into 6 pieces ) - seasoning with lime and chopped ginger for 5 minutes, and fry the chicken until they are half done with light brown colour.
  • 4 boiled eggs
  • chopped 3 shallots
  • chopped 2 cloves garlic
  • 1/2 teaspoon white pepper
  • 2 tablespoon of oyster sauce
  • soy sauce ( indonesian sweet soy sauce )
  • tomato if you like ( im not using )
  • 100ml water

Directions :

  • Saute shallots and garlic until fragrant then add the chickens.
  • Season with oyster sauce, sweet soy sauce, and pepper. stir it.
  • Add boiled eggs and water , let it boiled until the chickens are done.

Bean Curd Pudding with Fruity orange juice


The main ingredients for this pudding actually not the bean curd...but Indonesian called this bean curd pudding/pudding tahu....

Ingredients :
  • 1 package of white agar agar
  • 1200ml of ( fresh milk 1000ml + water 200ml )
  • 1tsp of Vanilla essence
  • 200gr sugar

Directions:

  • Bring to boil all ingredients over medium heat and keep stirring.
  • Pour into pudding mould and let it cool completely. and pour in an orange juice. chill it.
  • Cut it and serve with tropical fruit or can one.

Balapis Manado/Layered cake balapis

This Balapis Manado is a traditional cake from Manado with strong flavour of pandan leaves. Manado is the capital city of the North Sulawesi province in Indonesia. Manadonese cuisine is famous throughout Indonesia because : Manadonese eat absolutely anything and the flavor of choice is very, very spicy ...LOL...Manadonese cuisine uses a lot of chilies and nicely scented herbs like kaffir lime leaf, basil leaf (daun kemangi), lemon grass and ginger.

And yeah i'm proud to be a Manadonese/Minahasan (actually half of Manadonese hehehhe and half of Javanese).


Here's the recipe of "Balapis Manado".....modified by me.
Ingredients :
  • 200ml of thick coconut milk , mix with 500ml of water and 400ml of fresh milk
  • 250gr rice flour
  • 50gr of tapioca starch
  • 200gr granulated sugar
  • 1tsp of pandan paste (becoz I cant find Suji leaves here to make green liquid paste)
  • 1/2sdt salt
  • 3 of fresh pandan leaves.
Directions:
    • Bring to boil in a saucepan over medium heat the coconut milk, pandan leaves and salt. let it cool until warm for around 30minutes.
    • Mix in big mixing bowl all dry ingredients of flour, tapioca starch and sugar and divide by 2 each in different medium mixing bowls.
    • Divide coconut mixture between 2 medium bowls (550ml each) and add pandan paste into one of the bowl and mix well.
    • Now, pour in white coconut milk into one bowl contains of dry ingredients and stir well until smooth. And pour in the green coconut milk into another bowl of dry ingredients and stir well until smooth.
    • Grease 20cm of cake pan with oil and put inside the hot steamer.
    • Pour in 50cc of white coconut mixture and steam for around 5minutes, and continue with ....
    • Pour in 50cc of green coconut mixture and steam for around 5 minutes.
    • Repeat the process untill no more mixture left ...in the end of the process steam a bit longer for around 20minutes.
    • Take out the cake pan from the steamer and let it cool.

Snow White Cookies

Some of my favorite cookies for christmas are nastar, kaastangels and putri salju (snow white cookies). for me snow white are some beautifully white cookies..... these snow-white cookies are made with ground peanuts and rolled in powdered (icing) sugar.

INGREDIENTS :

  • 1 cup butter
  • 1/4 cup sugar
  • 1 tbsp water
  • 2 tsp vanilla
  • 2 cup flour
  • 1 cup cashew nuts, chopped
  • Icing sugar

    DIRECTIONS :
  • Beat butter for 30 seconds.
  • Add sugar and blend well.
  • Add water and vanilla. Mix well.
  • Put in flour and peanut.
  • Roll into balls and shape into a crescent or other dimension to your liking.
  • Place on greased cookies pan.
  • Bake in oven for 15-20 minute.
  • Take out from oven, and roll them into the icing sugar while still warm.

Corn flake Cookies

Have made some cornflake cookies few days ago....Gives you an elegant sensation in every bites and so crispy, so If you like little crunchy cookies, this one for you....

INGREDIENTS :

  • 200gr butter
  • 100gr granulated sugar
  • 250gr all purpose flour
  • 150gr cheddar cheese
  • 2 egg yolks
  • 1/4tsp vanilla extract
  • 1/2tsp baking powder
  • 130gr cornflake

DIRECTIONS :

  1. Preheat oven at 180C
  2. In mixing bowl beat butter and sugar , add egg yolks, beat until fluffly and pale.
  3. Add cheddar cheese, vanilla extract , baking powder and cornflake...mix well
  4. The last add flour and mix it.
  5. Take a bit of dough and roll it and place on greased cookies pan, press with fork and u can garnish with chocolate chip or cherry......
  6. Bake for about 30 minutes.
  7. Remove and place on wire rack .
  8. Let it cool completely and keep in an air tight container.

Chocolate Cake

Chocolate Cake and Frosting, this is based on a recipe from the "Joyofbaking" . Pretty easy to make ....

INGREDIENTS :

Batter:

  1. 195gr all purpose flour
  2. 200gr granulated sugar
  3. 25gr cocoa powder
  4. 1tsp baking powder
  5. 1tsp baking soda
  6. 1/4tsp salt
  7. 75gr unsalted butter
  8. 240ml warm water
  9. 1Tsp lemon juice or vinegar
  10. 1tsp vanilla extract

(batter :Preheat oven a\@180C, in 20cm ungreased cake pan stir shifted flour, sugar, cocoa powder, baking powder, baking soda and salt then add melted butter, warm water, lemon juice, vanilla extract. With fork mix all ingredients together and bake for 35minutes, or until tester inserted in the center of the cake comes out clean, remove from oven and place on a wire rack to cool completely)

Frosting :

  1. 170gr DCC
  2. 180ml heavy cream
  3. 1Tsp unsalted butter

(frosting : my method is a bit different from "joyofbaking" I bring to boil all 3 ingredients altogether, then let it sit at room temperature ( around one hour) and beat until smoth and light. With a knife spread the ganache over the cooled cake.
